There are good secret and bad secret. I’m a fan of the good kind. The kind that leads to surprise birthday parties, marriage proposals and dinner being ready when you walk in the door (that secret needs to happen more often).
There’s a bit of a different secret going on today, but still the good kind.
This is my first month participating in The Secret Recipe Club. Every month bloggers are assigned a ‘secret blog’ to look through, pick a recipe to make, and share it on reveal day. Well today is that day, reveal day!
Heather, I kept a little secret from you… for August I was given Join us, pull up a chair to find a tasty recipe from. It sure wasn’t very hard to find something tasty, but then came the tough part… choosing.
When I saw your cream cheese, feta and cranberry pinwheels and was instantly intrigued. Pinwheels are just so much fun to eat. I’ve eaten a lot of pinwheels in my day, mainly because Costco carries them in ginormous quantities and they’re simple party food.
I’ve made pinwheels a long time ago with a recipe from my mom. I vaguely remember them having ham, cream cheese and curry. Mmmmm curry. I should get that recipe from her again.
So I guess what I’m trying to say here is, I needed to make them again.
Rolled, chilled and stacked. These little pinwheels were fun finger food for a light Friday night meal. I paired them with a simple salad covered in cinnamon vinaigrette.
Yes, the amazing cinnamon vinaigrette from Mama Pea’s book. I finally made the way to Costco to pick up my copy of Friday!
I digress. So I paired it with salad topped in caramelized onion, dried cranberries, freshly picked tomatoes and walnuts. Of course add a tasty dressing on top and you’ve got yourself an amazing summer meal. No oven involved. ![]()
I added the smoked salmon into these pinwheels because I just love the combo of cream cheese, smoked salmon and green onion. If I had to choose a filling for an omelet any time any day, it would be that combo. It’s divine. And so are these.
Smoked Salmon, Cream Cheese, Feta & Cranberry Pinwheels
Makes 5 rolls ~ about 30 pinwheels depending on how big you slice themAdapted from Join us, pull up a chair
Ingredients
- 8 ounces cream cheese, softened
- 6 ounces feta cheese crumbles
- 6 ounces smoked salmon
- 1/2 cup green onion, diced
- 1/2 cup dried cranberries
- 1/4 tsp fresh ground black pepper
- 5 soft whole wheat tortillas
Directions
- In a large mixing bowl, mix the cream cheese, feta, smoke salmon, green onions, cranberries and pepper until well combined.
- Spread the mixture evenly over each tortilla. Tightly roll the tortilla and wrap with saran wrap. Refrigerate for 2 hours or overnight. Once firm, slice into 1 inch pieces. Serve chilled.
